Context
This workshop is part of the process of setting up international workshops during the JAS. We are proposing this topic, which makes sense in terms of “safe, healthy and sustainable” products associated with new food uses. It addresses the issue of supporting the immune system through healthy food but also through the biotechnologies that could be implemented.
Objectives
The workshop aims to provide the participants (French companies but also foreign companies in videoconference) with a different view of the proposed theme, through the eyes of European players. In this case, the objective is to understand how these companies approach food as a mean of supporting the human immune system. The innovative aspect can be seen through a better understanding of the immune system as well as the use of biotechnologies or extractive techniques.
Issues raised during the workshop
What are the links existing between food, intestine, digestion, micro biota? What are the interests of probiotics and the promises of nutraceutics? How can ingredients obtained by extraction of active ingredients meet the multiple expectations of consumers looking for healthy, good and sustainable products but also looking for answers to their health concerns?
